• Biryani is a popular rice dish in India and other South Asian countries.
    Its a Persian dish, brought to India by the Mughals. Since then the recipe has gone through several transitions and customizations. Today there are hundreds of unique versions of Biryani. It is originally a non-vegetarian dish but I have modified some of its elements for the vegans around the world. Here is the recipe

Ingredients:

  • Golden Sella Rice - 2cups     
  • Soya chunks- 1 cup
  • Paneer- 200g
  • Finely chopped onions- 2 cups
  • Crispy fried onions(for garnishing)
  • Tomato puree - 1cup
  • Coriander (cilantro)
  • Ginger-garlic paste- 1tbs.
  • Pure Ghee -1 cup
  • Food colour powder (red, yellow)
  • Lemon juice- 1 tsp.
  • kewra water

Spices:

  • Cinemon- 1 stick
  • Green Cardamom- 4pcs.
  • Black Cardamom- 1 pc.
  • Black pepper corns - 1 tbs.
  • Nutmeg - 1/4th of a pc.
  • maize - 1 pc.
  • Star Anees- 2-4 pcs.
  • Bay leaves - 2-4 leaves
  • Biryani masala powder
  • Garam masala powder.

Procedure:

  • Wash the rice thoroughly and remove all the starch on the bran.(keep it aside)
  • Boil 4 cups of water. add a pinch of salt to it and then add soya chunks in the water. let the chunks soak in water for half hour . then squeeze all the water out of the chunks and keep them aside.
  • In a pressure cooker add 1/2 cup of ghee and warm it on low flame. now add the bay leaves. after a few seconds add all the spices in ghee and let be there for 1 min. keep stirring.
  • Now add the washed rice and mix well. cook the rice in ghee on low flame for the next 5 min.
  • Now add about 2 an 1/2 cups of water and 2 tbs salt to it. as soon as the water starts boiling, add 1tbs lemon juice, mix well and cover the lid.
  •   Turn off the stove after 2 whistles.
  • In a pan add 1/4 ghee and warm it. now add finely chopped onions. let the onions cook till they become golden brown in colour. keep mixing.
  • now add the ginger-garlic paste. stir and cook for about 2 min.
  • Now add tomato puree , 1 tbs salt, 1 tbs biryani masala powder, 1 tbs garam masala powder and cook for the next 2 min till it start to leave the oil. keep mixing and keep the flame low all the time.
  • Now add soya chunks in it and mix well for 3 min. add 1/4 cup water to avoid sticking to the pan and overcooking.
  • When there is little or no water left in the pan, add the paneer cubes and mix well. leave it for 20-25 min to cool down and marinate well.
  • Dissolve about a pinch of both the food colours in 1/4th cup of water in two separate containers.

Layering:

  • Take a large container and coat it with the left over 1/4 cup of ghee.
  • Add the 1st layer of cooked rice, then a layer of marinated paneer and chunks and then make another layer of rice. keep layering till the rice and paneer are left.
  • Sprinkle some crunchy fried onions and cilantro over the last layer on top.
  • In the end sprinkle the food colour water and 2 tbs Kewra water unevenly over the layered biryani and cover the container with a lid. keep the container on low flame for the next 2-3 min. now turn off the flame and let the biryani rest for the next 15 min. then serve it hot.

Tip: 

Burn a piece of coal and place it over a big slice of onion. keep the slice over the layered biryani and add 1 tbs of pure ghee over the coal. cover the lid immediately ad put some weight on top to prevent the smoke from escaping
      This will give an extra Smokey flavour to it .Serve Biryani with veg. raita ( for raita recipe , keep following)
