- large Potatoes- 2(cut into long fingers)
- Cooking oil-1/2 cup
- Schezwan chilli garlic sauce
- Tomato ketchup
- Coriander(cilantro) and mint leaves
- Black pepper powder
- Garam masala
- Wash the potatoes thoroughly and remove all the starch on it(wash at least 3 times)
- take 500ml water in a large boiling pan and add 1tbs salt in it. let the water boil. now add the potatoes fingers to it and let them boil for not more than 5 min (half cooked)
- After the boiling the potatoes, strain them and immediately transfer to chilled water.
- let the potatoes rest in chilled water for about 15 minutes.
- Strain the potatoes and discard the water.
- Now take 1/2 cup of cooking oil, add all the potato fingers and fry on medium flame till they become golden brown in colour. keep mixing.
- Take out the fried potatoes and place them on a paper towel to remove excess oil
- In another pan add all the fried potatoes and a pinch of all the spices and salt and mix well( do not turn on the flame till the potatoes are well mixed with the spices)
- Now add 2tbs of schezwan chilli garlic sauce and 4tbs of tomato ketchup to the potatoes.
- turn on the flame, keep it low. keep mixing the potatoes with the salt till all the moisture is gone and the sauces gets well coated on the potatoes.
- transfer the potatoes to a plate and garnish with some mint and coriander leaves.
- Tasty chilli potatoes are ready to be served
