Sannata

Sannata is a popular food of Bundelkhand, Uttar pradesh( India). It can be named as another version or an older and rustic, local version of Raita , which is a yoghurt dish. Sannata is a delicious dish which can be eaten as well as drunk. can be eaten as an accompaniment along with any other main course dish. and can be drunk as a beverage . Its preparation is very easy and takes as less as 5 ingredients( can be more for the modified versions). here are my own twisted version of  Bundelkhandi Sannata



1. Boondi Sannata



Ingredients:

  • yoghurt - 1 cup
  • Bundi- (small fritters)-1/2 cup
  • Salt
  • roasted jeera powder
  • red chilli powder
  • mint and coriander leaves
  • water- 1/2 cup

Method:

  • Beat the yoghurt and add a pinch of jeera powder, red chilli powder. add salt according to your taste.
  • Soak bundi for about 1 min in water , then strain the water and squeeze the bundi nicely to remove all the excess water from it.
  • Add bundi to the yoghurt mixed with spices.
  • Now add water to adjust the consistency.
  • Garnish with mint and coriander leaves.
Serve in a glass as a drink or in a bowl as an accompaniment with a main course dish like poori-bhaji(for the recipe keep following)



2. Khatta-Meetha Sannata

Ingredients

  • yoghurt - 1 cup
  • boondi- 1/2 cup
  • Salt - 1/2tsp.
  • Sugar- 1/2tsp.
  • Roasted jeera powder
  • Black pepper powder
  • Mint leaves paste-(grind a few mint leaves with water to make a fine paste)
  • Water- 1/2 cup

Method

  • Beat the yoghurt and add a pinch of jeera powder and black pepper powder to it.
  • Add salt and sugar and mix everything nicely.
  • Now add mint leaves paste and mix again.
  • soak the boondi for 1 min in water , then strain it and squeeze to remove excess water.
  • Add the soft boondi to yoghurt mix and add water to adjust consistency.
  • the delicious Khatta - Meetha Sannata is ready.

Serve in a glass as a drink or in a bowl as an accompaniment with a main course dish like poori-bhaji(for the recipe keep following).
